  1. I want my life to continue on just the way it has been the last month for ever! Nothing grand, no big highs, but no big lows either. Just “being” me and being appreciated for it. Oh yeah, and somewhere to live.

      Carrie … I want to meet you! I really do because you are one of the best examples of a woman who will continue to laugh at the malfunction of the universe. I am sooo proud and happy that you honor the CCC with your presence. BTW so glad that you will do the questions … thought you forgot about it. Have the best Christmas Carrie and I know that 2013 will continue to bring you closer to your good fortune.

    Seriously, this Christmas is blowing chunks every which way. I spent yesterday at work (ALWAYS a really, really fun time), then spent another six hours in a hospital waiting with a friend while her new beau had emergency surgery on his perfed intestine, which was caused by diverticulitis which he never knew he had. Sheesh. He’s okay so far, but my dinner consisted of conversation with the parental units through a mouthful of cheese followed by some really really BAD food (and by bad I mean extremely orgasmically good pecan pie, which those who know me will realilze is SO far outside the norm for me that I might not even BE me. Who knows? I could be a Pod Person now.). Hope things are better for you Lafemme, my seester by another mother…Be well, and remember, it’s the little things–like breathing–that make life….well, Life.

      Oh ctoby … I made vegan cinnamon rolls and the nieces and nephews loved it! My nephew teased that he wouldn’t eat it if it didn’t have any bad stuff in it but he loved it 🙂 I did put turbinado sugar (I just ground it to make it finer) instead of the brown sugar … and a bit of maple syrup for the dough (added potato flakes as well to make it softer).           Ctoby! here’s the recipe for Vegan Cinnamon Rolls

          For the bread:

          Use whatever soft bread recipe you have and replace the milk with almond milk and the oil with Earth Balance butter sticks. I added a tablespoon of vinegar to the almond milk because my original recipe required buttermilk. And I added 1/2 cup of potato buds.

          2 1/2 cups bread flour (you can also use all-purpose and forgo the pastry flour but make the all-purpose 3 1/2 cups)
          1 cup pastry flour
          1/2 cup potato buds
          1 packet active dry yeast or 1 tablespoon active dry yeast (this is what the original recipe calls for)
          1 1/2 cups almond milk
          1/4 cup warm water (to proof the yeast and add *3 tablespoons maple syrup)
          *3 tablespoons maple syrup
          1 tablespoon vinegar
          1 tsp vanilla
          1 1/2 tsp salt

          Mix dry and wet and add more bread flour as needed. (I like a sticky dough so I added about 1 cup more bread flour as I kneaded for about 10 minutes). How much flour you add really depends … just go with it 🙂

          For the filling:

          1 stick earth balance vegan butter stick
          1 cup turbinado sugar (grind it to make it more fine)
          1 tablespoon vanilla

          Topping:

          1- 1 1/2 cups ground turbinado sugar with 1/2 stick vegan butter and a couple tablespoons of almond milk (optional: 1 tsp of vanilla)

          Let the dough rise for about 2 hrs or until double in size.

          Punch it down very slightly and roll to a rectangular shape.
          Spread filling all over and roll.
          Cut log into thirds and cut the thirds into 3 pieces.
          Place in an oil baking dish and let rise for another hour or doubled in size.
          Bake for 30-40 minutes at 350 degrees
          Top with sugar topping

          It’s vegan, but STILL FATTENING and it’s awesome with coffee! 🙂
